"Trust Me, You Have Food At Home" Butter Garlicky Rice Noodles c/o Half Baked Harvest

I'm haunted by this quote…

every time I think "there's nothing in my house to eat," and I almost succumb to ordering take out, I think of that quote. So I got on my favorite food blog Half Baked Harvest and found this super simple and delicious recipe. Basically I can’t take credit for the recipe but I wanted to share it with you!

I’m going to start posting the food I make here and either giving you my recipe if I created it, or linking to the recipe I found online instead of hoarding them for the 13 year old fat kid inside me who just cryptically posts photos on Instastory bragging (or trying to lure a husband) about what I’ve made with no real instructions for you all.

I’ve been making a lot of Asian-inspired dishes lately, so I already had some ingredients that some of you might not normally have in your fridge and pantry but all of the staples can easily be purchased at most grocery stores.

I’m using brown rice noodles, because I try as much as possible, to not eat gluten. It’s apparently bad for the thyroid that God, so humorously, radiated out of my body. Well, it wasn’t actually radiated, my body just attacked it for fun and now I don’t have a thyroid gland anymore = not much of a metabolism without taking lots of fake thyroid hormones. Oh, wait, this is about food. Sorry. I can really make anything about me.

Back to the recipe. So I went through the roster of what I had on hand and basically adapted the recipe based on what was in my fridge. Hope you enjoy!

Recipe:

Ingredients for 1

Prep/Cook time: Less than 20 min

2 gloves garlic pressed or grated

2 Tablespoons butter (but to be honest I put at least 3, mind your own business.)

1 teaspoon fresh grated ginger (about an inch piece)

2 Tablespoons soy sauce

1 green onion (scallion) chopped

1 egg

1 small package brown rice noodles

1/4 cup spiraled Zucchini

3 quick small dashes of Fish Sauce (completely optional)

I teaspoon Sesame Oil drizzled at the end

Step 1: Bring a salted pot of water to a boil. Once boiling put the egg with shell on and the little pouch of rice noodles in the boiling water. Cook the rice noodles for 5 min and then remove and the egg for 1 1/2 minutes longer (a total of 6 1/2 min) and then remove and place in cold water.

Step 2: Saute the butter and garlic for about 3 min stirring often and on low so the garlic doesn’t burn. Then add the ginger and green onions and saute for another 2 min. Add the Zucchini spirals and cook for another 4-5 minutes. Feel free to add 1 tablespoon more of butter at this point.

Step 3: Place the cooked rice noodles into the same pan with the butter, garlic, ginger, green onions and zucchini and toss.

Step 4: Add 2-3 tablespoons of soy sauce, a few tiny dashes of fish sauce and toss ingredients all together and cook on low for a few minutes.

Step 5: transfer to a bowl, drizzle the sesame oil on top and feel free to add a little more green onion as a garnish.

Step 6: peel your perfectly cooked soft boiled egg, cut it in half and place it on top letting the yolk seep into the noodles.

Step 7: Enjoy while watching Paul run on 90 day Fiance
